Beneath the Surface: NFL Quarterback Jake “The Snake” Plummer, Why Yawning Is Good For Us, Mothman, Filipino Sailors Living On A (Mostly) Sunken Ship, Ice Cream Cake

 

In this episode, legendary NFL quarterback Jake "The Snake" Plummer talks with guest reporter Justus about making big plays, being nice to people, and life after football. Nichole talks with Dr. Andrew Newberg about what's great about yawning and why some Olympic athletes do it right before they compete. Evan elucidates Mothman, the winged creature with a penchant for O'Hare International Airport. Nichole teaches us to turn our favorite ice cream into a delicious cake. Ice Cream Cake Recipe

Ingredients

2 cups (aka 16oz or 1 pint) ice cream

1 1/2 cups self-rising flour

Directions

  1. Preheat oven to 350 degrees. Get a grown-up's help with the oven. 

  2. Grease a loaf pan (8 1/2 long x 4 1/2 wide x 2 1/2 tall) or use a cupcake pan and paper liners.

  3. Let ice cream melt to at least soft-serve consistency.

  4. Combine ice cream and flour in a mixing bowl.

  5. Stir until just combined. A few lumps of flour is ok.

  6. Scrape the batter into the baking pan.

  7. Optional: top with chocolate chips, sprinkles, fruit, jam, or whatever you like!

  8. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from oven. Let cake cool in the pan for at least 5 minutes. Then remove cake from pan and cool on rack, or let the cake continue to cool in the pan until it is cool enough to eat.

Note: You can make your own self-rising flour. To make the 1 1/2 cups of self-rising flour needed for this recipe, combine 1 1/2 cups of all-purpose flour, 2 1/4 teaspoons baking powder, and 1/2 teaspoon salt.
